These components perform a different job from the burner. The burner creates flame and heat, while the ceramic material helps absorb and redistribute that heat beneath the cooking surface.

Because ceramic media sits directly below food, it is also exposed to drippings and grease. Over time, the material can become heavily soiled or damaged.

The structure supporting the ceramic material matters too. A deteriorated rock grate or tray may no longer support the media correctly even when some of the ceramic pieces remain usable.
